Ingredients:
- Vanilla sugar 8 g;
- 9 g of gelatin;
- Milk 250 ml;
- Cream 25% 250 ml;
- Egg yolk 5 units;
- Sugar (fine) 60 grams;
- Berries 200 g;
- Raspberry 400 g;
- Powdered sugar 1 tsp .;
- Blackcurrant liqueur 50 ml;

Quantity - 4 servings
2 gelatin soak in a little cold water.
Milk to a boil. Mash the yolks with the sugar until white and a thin stream, stirring constantly, pour the hot milk. Add the vanilla sugar.
Boil the milk mass over low heat, stirring constantly with a wooden spoon until thick. Spoon should be wrapped creamy mass. Remove weight from the heat, when the spoon is a clear "track", if you hold your finger on it.
3 Add the thickened mass squeezed gelatin. Stir until completely dissolved. Strain the milk through a fine sieve weight and refrigerate.
Whip the cream in a solid foam. Enter the whipped cream into the cooled milk supply.
4 Mix and pour into a mass of forms for jelly or souffle.
Put in refrigerator until cool (at least 2 hours).
5 Preparation of the sauce:
Prepare a water bath. In a large pot of boiling water, put a smaller pan, so that the bottom of the last lightly touches the water.
Place the raspberries in a saucepan and cover with the top cover.
In a water bath warm up raspberries until it thoroughly not let the juice (about 20-25 minutes).
6 miss berries through a sieve, removing all that is left in the sieve. Add the raspberry liqueur and sugar. Mix well.
7 Ready mousse gently pull out the forms directly to the serving plates. Pour the sauce over and sprinkle with berries. Serve immediately!
Note: Mousse and sauce can be prepared in advance and keep in the refrigerator for up to supply up to 3 days.
