Ingredients:
- 1/2 cup warm water
- 2 teaspoons honey or maple syrup
- 1 teaspoon molasses
- 1.5 teaspoons of yeast
- 1/2 cup flour
- 3/4 cup whole wheat flour
- 1/2 teaspoon salt
- 1-2 tablespoons of olive oil
Filling:
- 1-2 tablespoons of olive oil
- sliced cherry tomatoes
- fresh or dried basil, finely chopped
How to cook:
In a bowl, dissolve yeast in warm water with syrup and molasses. Leave on for 10 minutes until the yeast is not active.Then gradually add the remaining ingredients and knead the dough. Knead it for 5-6 minutes.
If the dough is too soft, add more flour or water.
Put the dough in a bowl greased. Close the bowl with a towel and leave to rise for 2 hours.
Then knead the dough by hand and put in the form. Leave it in for another 15 minutes in a warm place.
Make holes in the dough with your fingers. Pour olive oil there. Sprinkle chopped basil over the entire surface of the focaccia and arrange sliced tomatoes. Leave for 20-30 minutes until it has doubled.
Bake at 180 degrees for 25 minutes. For crisp: Preheat oven to 230 degrees, then reduce to 200 and bake for 20 minutes. Let cool, slice and sprinkle with olive oil.
